Judge Casey’s Pizza - with Ham & Arugula

Ingredients:

Pizza dough or pre-packaged 10' Pizza base

- or bigger if you have a big family or lots of friends, adjust amounts to compensate.  

Two tablespoons thinly slivered red onion.

A teaspoon sliced Fresno chilli (or jalapenos)

A generous layer of ham.

A ½ cup Parmesan cheese

A tablespoon and a half  Judge Casey’s

½ a cup Arugula

½ a Zucchini or summer squash

- olive oil, lemon, salt and pepper.

 

Top tip:

  • Use a Pizza stone.

Why? A pizza stone will give you that crispy crust that you can’t achieve with a regular pizza pan.

 

Instructions:

Preheat your oven to 500F (with Pizza stone inside)

 

On a floured surface roll out a 10’ Pizza dough.

- or use a pre-packaged pizza base.

Spread Judge Casey’s thinly and drizzle with olive oil.

Sprinkle ingredients on pizza base: red onion, Fresno chili (or jalapenos), ham & Parmesan cheese.

Tip: Don’t load up on ingredients, I have to resist the urge to add too many toppings. Too many toppings and the base may not cook well.

In a bowl, toss arugula and thinly shaved zucchini or summer squash with olive oil, a squeeze of lemon, salt and pepper.

 

Cook pizza on the middle rack till perfectly crispy.

About 5 minutes, oven cooking times vary depending on dough. 

Once cooked, top immediately with arugula salad. The heat of the pizza will soften them up and make them more pungent, but they’ll retain their color and texture.
